The one thing I get asked most often is what to eat for lunch when at work. No one wants to spend a fiver everyday on an uninspiring sandwich and a packet of popcorn, but the alternative is to make your own and bring it into work, which can be tricky! So, to help where I can, I’ve decided to start a new series of recipes, called Lunchbox.
The basic premise is as follows: I will post one Lunchbox recipe every Tuesday that can be whipped up in less than 20 minutes and features only 4-5 main ingredients. Every recipe will be a vegan dish that can be eaten as it is, but all will include several optional add-ons, for those who don’t follow a vegan diet – that way everyone’s covered. These add-ons will be split into three categories: sauces, vegetarian, and meat and fish.
